Toasted Vegan Granola Cookies Recipe

Everyone seems to have a treat they love to pair with coffee or tea. Whether it is a cookie or a croissant, we just can’t seem to break the habit. Cookies are well known for being the go-to in this scenario, but how often do we find a gluten-free vegan granola cookie recipe we enjoy pairing with our morning routine?

This gluten-free vegan granola cookie recipe came about (like most good things), unintentionally. A late-night craving to pair with a cup of tea before bed. I’ll make do, I figured. These vegan granola cookies were not my typical cookie. They were thin and crispy unlike the light and fluffy cookies I am used to. However, they tasted delicious and looks are not everything. Plus, I do actually enjoy crispy cookies. Some cookies are better than no cookies.

Thus was born this delicious Toasted Vegan Granola Cookies recipe. These cookies are quite easy to make, they are vegan and gluten-free, and have the same great taste as Nora’s Kitchen Granola. What’s not to love?


YOU WILL NEED:
  • 2 cups Nora’s Kitchen Granola
  • 1 cup Bob’s Red Mill all purpose gluten-free baking flour
  • ½ tsp salt
  • ¾ tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup vegan baking or vegetable shortening
  • ¾ cup brown sugar (densely packed)
  • 1 ½ tbsp aquafaba or the equivalent of one egg substitute (EnerG Egg Replacer works too!)
  • 1 tsp vanilla

3-4 dozen

20 minutes
DIRECTIONS
  1. Preheat oven to 375 degrees.
  2. Melt ½ cup of shortening in a heavy frying pan then add granola. Stir until all the grains are coated and begin to darken. 1-2 minutes is all it should take as the granola has already been slowly roasted and you do not want to burn it.
  3. While the granola is cooling combine aquafaba, ½ shortening. Sugar and vanilla in a bowl. Mix well until ingredients are blended smoothly. Finally add the granola mixture, remaining dry ingredients and beat until light/fluffy.
  4. Line a cookie sheet with parchment paper (or non-stick liner) and round out teaspoon size balls 3 inches apart from one another onto paper. Bake for 10-15 minutes or until cookies have flattened out. If you followed the recipe, your Toasted Vegan Granola Cookies Should have a dark brown color when finished.
  5. Remove from baking sheet and place cookies on a wire cooling rack. If you want them to stay nice and crispy, store in a sealed container after they are completely cooled.
