Vegan Gluten-Free Granola Muffins

Another healthy, yet delicious breakfast treat with Nora’s Kitchen Granola! In just 30 minutes, you’ll have 12 vegans, gluten-free granola muffins to help balance out your breakfast for the week.

These are also a great addition to a semi-sweet treat after lunch, a post-work-out snack, or a dessert to bring to dinner with friends.

YOU WILL NEED:
  • 1 cup Bob’s Red Mill or other GF baking flour
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 ½ cup Nora's Kitchen Granola
  • 1 cup unsweetened coconut or almond milk (or any other non-dairy milk substitute)
  • 2 tbsp aquafaba or EnerG egg replacer
  • ¼ cup vegetable or coconut oil
  • 1 tsp vanilla
  • ¼ tsp almond extract or other flavoring
MAKES:
12 muffins
TIME:
30 minutes
DIRECTIONS
  1. Preheat oven to 400 degrees and prepare standard muffin pan with paper liners or greased cups.
  2. Combine ingredients 1-5 in a mixing bowl and set aside.
  3. Mix milk and granola in separate bowl then let sit for 5-10 minutes.
  4. Combine all ingredients and stir until all ingredients are damp. Spoon into greased muffin pan, and if desired, you can put some extra granola, sliced berries, chopped nuts or coconut on top of the batter.
  5. Bake for 20 minutes until inserted toothpick comes out clean.
