It’s hard to enjoy yogurt parfaits during the holidays, especially for vegans. Most fruits we love are out of season, and vegan yogurt doesn’t always satisfy the craving for these creamy and fruity desserts.

We are OBSESSED with Coyo Coconut Yogurt these days and it’s our favorite yogurt that is vegan, gluten-free, paleo, and ketogenic friendly. We honestly can’t find another vegan yogurt that even compares to the consistency of this one. Unlike most vegan yogurts which are runny, this yogurt has the texture of Greek yogurt. Thick and creamy! They have 4 flavors to choose from including regular Coconut, Mango, Chocolate, and Mixed Berry. We used a blend of Coconut and Mango for this recipe because it was so hard to choose. We love them all.

Our gluten-free & vegan yogurt parfait bowl is sure to finally satisfy those holiday cravings for sweets while still maintaining a healthy balance with your gluten-free and/or vegan diet.


YOU WILL NEED:
  • 1 cup Coyo coconut yogurt (we mixed a half of cup of both regular & mango)
  • 1/2 Nora's Kitchen Granola
  • 1/3 cup pomegranate seeds
  • 4-5 chopped dates
  • 1/2 an apple (we chose Golden Delicious)
MAKES:
1 serving
TIME:
5-10 minutes
DIRECTIONS
  1. Add yogurt to bowl.
  2. Layer remaining ingredients.
  3. Eat!
